Thai Grilled Chicken Wraps

Ingredients:

  • 16 oz JSF All Natural Grilled Chicken; thawed

For the Peanut sauce:

  • 1/4 c peanut butter
  • 3 tbls brown sugar
  • 2 tbls tamari or soy sauce
  • 1/2 lime, fresh squeezed
  • 1 tbls sambal oelek or sriracha
  • 1 tbls fresh ginger, grated
  • 1 garlic clove, minced

For the Wraps:

  • 4-6 whole wheat wraps
  • 2 c shredded red cabbage
  • 1 c shredded carrots
  • 1/4 c sliced red bell pepper
  • 1/4 c sliced cucumber
  • Fresh cilantro, chopped, to taste
  • Sliced scallions, chopped, to taste

Directions:

Chopped peanuts, to taste.

  1. Whisk together all of the ingredients for the peanut sauce, cover and refrigerate until ready to use.
  2. Assemble wraps, place about 3-4 oz. of chicken on each wrap and top with desired toppings.

Drizzle with peanut sauce and serve.
